Cassis Bakery Signature Cakes
All Non – Seasonal cakes are available by order, provided that enough notice is given. Most specialty cakes are available in the 8″, 10″ sizes or larger.
Major holidays may make certain non-seasonal cakes unavailable for a short time.
Cheese Cake
If making cheesecake were a sin, Cassis Bakery would be in a lot of trouble. Our cheesecake has a velvety texture that comes with only the finest ingredients of cream and sweet cheeses. The base cradles handfuls of fresh berries and its top is finished with perfect strawberries glazed with apricot.
Fruitopia
Cassis brings you another cake perfect for your summer occasions. A light but sumptuous cake, the Fruitopia cake is three layers of our signature chiffon sponge cake filled with two layers of assorted freshly cut seasonal fruits and whipped cream. Typical fruits used are kiwis, strawberries, peaches, raspberries, blackberries, blueberries, mandarin oranges, and many others. The cake is iced with whipped cream and dusted with crushed chocolate to add a little sweetness.
Boston Cream Pie
The Boston cream pie is another old Yankee favorite that Cassis has added their own flare to. Made in the form of a cake, we have taken three layers of our signature vanilla chiffon sponge cake and filled it with layers of rich diplomat cream. The cake itself is topped in a dark chocolate ganache and finished with white chocolate piping.
Black Forest Cake
A traditional favorite the world over, Cassis bakery delights in bringing you a legendary dessert Our Black Forest cake is three layers of our signature chocolate chiffon sponge cake soaked with imported Kirsch liquor. The cake is filled with fresh whipped cream and fine imported sour cherries. The cake is then iced with more fresh whipped cream and candied cherries and garnished with dark chocolate shavings.
Fruit Flan
Since we've been open, Cassis has gained a sizable following for this showpiece dessert We begin with a buttery tart crust filled with diplomat crème' and just a hint of raspberry preserves and adds a dazzling array of fruits including: strawberries, raspberries, and peaches. kiwis, cherries, blueberries and a bevy of other seasonal fruits. The Flan is then glazed with apricot to give it a little extra shine and make it an impressive centerpiece to an occasion.
Carrot Cake
Never has there been a carrot cake like this! Cassis's carrot cake is three layers of carrot spice cake with coconut and pineapple and frosted with a decadent cream cheese frosting flavored with fresh mandarin oranges. Sure to appease the toughest desert critic.
Tiramisu
Considered by many of the bakery's loyal customers to be one of Cassis's best kept secret, our Tiramisu is surely an unforgettable cake. We begin with three layers of our chocolate chiffon sponge cake lightly flavored with real Kailua. We add generous layers of imported mascarpone cheese, a touch of chocolate butter cream, and surround the cake with walls of imported ladyfingers. Our Tiramisu will change your taste in dessert forever.
Strawberry Shortcake
Another old favorite made spectacular by the chefs at Cassis, our strawberry shortcake is three layers of a delicate vanilla chiffon sponge cake lightly flavored with fresh lemon. Between these layers are fresh cut strawberries and real whipped cream tops the entire cake and layers within. Finished with chocolate shavings, this cake is sure to add a light hearted flare to any meal.
White Forest

Almond Pear Tart
A favorite of many Cassis customers, our almond pear tart is an exquisite dessert for almost any time of day or year. We begin with a 9" traditional French butter tart and fill it with our own sweet frenchipan pastry. A generous layer of freshly fanned pear is arranged on top of the frenchipan and the tart is glazed in apricot.
Baileys Cheese Cake
Working of our regular cheesecake we also offer the Bailey's version for St. Patrick's Day. By adding an ample amount of Bailey's Irish Cream, the cheesecake takes on its new flavor and becomes an unbelievable St. Patrick's Day desert.
Custom Made Fresh Mousse Cakes
For birthdays, anniversaries, and other special occasions we suggest that you allow Cassis Bakery to put together the perfect cake to suit your taste. Our mousse cakes can accommodate any size gathering serving from 6-100′s of guests.
1. Choose either three layers of a delicate vanilla chiffon sponge cake or a rich chocolate chiffon sponge lightly flavored with fine liquors and/or natural flavorings to match the filling of your choice
2. Choose a fresh mousse filling made from real fruits, nuts, and/or fine imported chocolate. Mousse that is available on a daily basis includes: chocolate, hazelnut, raspberry, and lemon. The following mousses may be available for 10″ or larger cakes or for an additional expense on smaller cakes: White Chocolate, Cassis, Orange, Mango, Caramel, Strawberry, and many other varieties. Fresh cut strawberries with whipped cream are also available as a filling upon request!
3. Choose a rich Italian buttercream made from imported butters and real fruits, nuts, and liquors for the icing on your special occasion cake. Available flavors include: Vanilla, Chocolate, Raspberry, and Hazelnut.
Raspberry Mousse
We begin with three layers of our home made vanilla chiffon sponge cake, lightly flavored with citrus syrup. Then two layers of raspberry mousse, enriched with fresh raspberries, are graciously added in between the cake layers. Finally, we base the outside of the cake with a raspberry preserve flavored Italian butter cream and butter cream rosettes garnish the top with candied raspberry wedges.
Chocolate Mousse
We begin with three layers of our home made chocolate chiffon sponge cake, lightly flavored with fresh roasted coffee. Then two layers of chocolate mousse, enriched with chocolate ganache, are graciously added in between the cake layers. Finally, we base the outside of the cake with a chocolate flavored Italian butter cream and butter cream rosettes garnish the top with chocolate raisins.
Hazelnut Mousse
We begin with three layers of our home made chocolate chiffon sponge cake, lightly flavored with fresh roasted coffee. Then two layers of hazelnut mousse, enriched with roasted hazelnuts, are graciously added in between the cake layers. Finally, we base the outside of the cake with a vanilla flavored Italian butter cream and butter cream rosettes garnish the top with roasted hazelnuts.
Lemon Mousse
We begin with three layers of our home made vanilla chiffon sponge cake, lightly flavored with citrus syrup. Then two layers of lemon mousse, enriched with natural lemon flavoring, are graciously added in between the cake layers. Finally, we base the outside of the cake with a vanilla flavored Italian butter cream and butter cream rosettes garnish the top with candied lemon wedges.

Heavy Chocolate Mousse Torte’
Our chocolate torte' is truly an experience not to be missed by chocolate connoisseurs. It is a baked flourless torte' containing a secret mixture of fine imported chocolate The torte' is enveloped in dark chocolate ganache and its sides dusted with’ chocolate flake. Definitely best served at room temperature, our chocolate torte' is by far our most decadent dessert.
Toasted Coconut Torte'
Back by popular demand in the month of May, Cassis brings you a delightfully unique dessert The torte' is three layers of our signature vanilla chiffon sponge with a sweet cream cheese and candied ginger filling. It is then topped with freshly toasted and sweetened coconut to create a strikingly robust texture. Perfect for all occasions.
Zebra Torte’
A visually dazzling torte', the zebra torte' is roulade style cake. This means that the torte' is made of rolled layers chocolate or vanilla chiffon sponge cake that create striking vertical stripes in each slice of torte'. Layers of chocolate or vanilla whipped cream bind the sponge cake into the pattern and fresh whipped cream ice the cake. A beautifully festive torte'.
Opera Torte’
A beautifully elaborate torte', the Opera torte' is known for its three layers of sweet jaconda sponge cake made from almond based flour and soaked with coffee flavored brandy The torte' is filled with a rich coffee butter cream and covered with a dark chocolate ganache. A superb dessert to accompany an afternoon espresso or cafe'.
Pithivier Torte’
This strikingly unique torte' was named after the town of it's origin Pithivier France. This delighted torte' is a shell of delicate fresh puff pastry glazed in apricot. Inside it's flaky exterior is a special mixture of frenchipan pastry and diplomat cream. The combination of puff and frenchipan pastry makes a delightful texture to this exquisite torte'.
Charlotte Russe
The famous charlotte russe was first served to the Czars of Russia and now can be served to you at your special occasion by the chefs of Cassis. This torte' is three layers of our signature chocolate or vanilla chiffon sponge cake. The torte' is filled with a specially prepared mousse of your choice using only the finest imported chocolate, nuts, and liquor as ingredients. The charlotte russe is available in chocolate, hazelnut, or raspberry. Imported ladyfingers cookies ring all of the varieties.
Sacher Torte’
This classical torte' is three layers of a special dense chocolate and hand-ground toasted almond sponge cake. The layers of cake are covered in fine apricot preserves and the whole torte' is covered in a dark chocolate coating. This torte' combines the flavors of rich chocolate, tangy apricot, and robust almonds, a rare and excellent medley of tastes. Bon Appetite!
Rum Truffle Torte'
How about hint of raspberry in a deep velvety chocolate with overtones of fine rums and liqueurs? Our rum truffle torte' is surely one not to be missed at your intimate dinner party. The torte' is three layers of our signature chocolate chiffon sponge cake soaked in rum, filled with the darkest Swiss style rum truffle filling, set on a base of buttery tart crust, and iced with real chocolate whipped cream. Finally, a subtle layer of fine raspberry preserves graces the bottom of this torte' to push your taste buds over the proverbial edge.
Nirvana Torte'
This classical torte' is three layers of our signature chocolate chiffon sponge cake soaked in real Kailua. The torte' is then filled with one layer of our tiramisu filling and one layer of chocolate mousse. Finally the torte is covered by cocolate ganache and topped off with a little bit of cocoa.
Havana Torte'
Many Of Our customers feel that our Havana is one our finest pastry. Now the same fresh smooth meringue finish of the Havana pastry available in a torte' form in the traditional Havana torte'. The torte' is two layers of deliciously smooth meringue and a layer of almond based frenchipan sponge cake. Finally the torte' is covered in a dark ganache coating with chocolate cigarette garnishing.
Custom Made Theme Cakes
If you’re looking for something a little more elaborate for an occasion with a theme we can help you there too. The masterful chefs at Cassis can make you a cake decorated with nearly any theme you can think of. First you decide what type of mousse cake is best for your occasion. Using the mousse cake as a base, our chefs sculpt decorations out of white chocolate creating a truly stunning and unique cake complete with any writing you’d like to include to include on the cake.
Pricing for Theme cakes depends upon the size of mousse cake requested, complexity, and ingredients of the requested theme.
