Cassis Bakery Signature Cakes

 

All Non - Seasonal cakes are, available by order provided that enough notice is given. Most specialty cakes are available in the 8" or 10" sizes or larger. Mousse cakes, cheesecakes, chocolate torte', and shortcake are the only 6" cakes available to order by phone.

Major holidays may make certain non-seasonal cakes unavailable for a short time.

 

Custom Made Fresh Mousse Cakes


For birthdays, anniversaries, and other special occasions we suggest that you allow Cassis Bakery to put together the perfect cake to suit your taste. Our mousse cakes can accommodate any size gathering serving from 6-100's of guests.

1. Choose either three layers of a delicate vanilla chiffon sponge cake or a rich chocolate chiffon sponge soaked in fine liquors and syrups to match the filling of your choice

2. Choose a fresh mousse filling make from real fruits, nuts, and fine imported chocolate Mousse that is available on a daily basis includes: chocolate, hazelnut, raspberry, and lemon. The following mousse may be available for 10" or larger cakes or for an additional expense on smaller cakes: White Chocolate, Cassis, Orange, Mango, Caramel, Strawberry, and many other varieties.  Fresh cut strawberries with whipped cream are also available as a filling upon request!

3. Choose a rich Italian buttercream made from imported butters and real fruits, nuts, and liquors for the icing on your special occasion cake. Available flavors include: Vanilla, Chocolate, Raspberry, and Hazelnut.

Other flavors of buttercream may be available upon request.

Other methods of icing are available as well upon request or additional expense. The following options are some examples that would make your cake even more memorable: White Chocolate covered cakes, Dark Chocolate Ganache covered cakes, Cakes covered in impressive chocolate Ruffles, and Fresh Whipped Cream covered cakes.

4. Cassis Bakery is capable of writing any message you deem appropriate for the top of your special occasion cakes. Writing may be limited on 6" cake.

 

Custom Made Theme Cakes


If you're looking for something a little more elaborate for an occasion with a theme we can help you there too. The masterful chefs at Cassis can make you a cake decorated with nearly any theme you can think of.  First you decide what type of mousse cake is best for your occasion. Using the mousse cake as a base, our chefs sculpt decorations out of white chocolate creating a truly stunning and unique cake complete with any writing you'd like to include to include on the cake.

Pricing for Theme cakes depends upon the size of mousse cake requested and the complexity and ingredients of the requested theme.


Fruit Flan- Since we've been open, Cassis has gained a sizable following for this showpiece dessert We begin with a buttery tart crust filled with diplomat crème' and just a hint of raspberry preserves and adds a dazzling array of fruits including: strawberries, raspberries, and peaches. kiwis, cherries, blueberries and a bevy of other seasonal fruits. The Flan is then glazed with apricot to give it a little extra shine and make it an impressive centerpiece to an occasion.


 

Cheese Cake - If making cheesecake were a sin, Cassis Bakery would be in a lot of trouble. Our cheesecake has a velvety texture that comes with only the finest ingredients of cream and sweet cheeses. The base cradles handfuls of fresh berries and its top is finished with perfect strawberries glazed with apricot.

 

Bailey's Cheesecake- Working of our regular cheesecake we also offer the Bailey's version for St. Patrick's Day. Carrot Cake -  Never has there been a carrot cake like this! Cassis's carrot cake is three layers of carrot spice cake with nuts, coconut, and pineapple and frosted with a decadent cream cheese frosting flavored with fresh mandarin oranges. Sure to appease the toughest desert critic.


Heavy Chocolate Mousse Torte’- Our chocolate torte' is truly an experience not to be missed by chocolate connoisseurs. It is a baked flourless torte' containing a secret mixture of fine imported chocolate The torte' is enveloped in dark chocolate ganache and its sides dusted with’ chocolate flake. Definitely best served at room temperature our chocolate torte' is by far our most decadent dessert.


Pineapple Upside Down Cake - Our pineapple upside down cake is a delightfully rustic dessert sure to compliment any formal dinner. The cake itself a moist spice cake containing pineapple, coconut ' walnuts, nutmeg, orange peel, and many other delicious tastes. Full rings of pineapple are arranged on top of the cake and glazed with apricot. The cake's sides are dusted with almond slivers and seasonal fruits are arranged around the top. This fantastic cake is best served at room temperature or warmed and is perfect as a dessert during the colder months or holidays.


Strawberry Shortcake - Another old favorite made spectacular by the chefs at Cassis, our strawberry shortcake is three layers of a delicate vanilla chiffon sponge cake lightly flavored with fresh lemon. Between these layers are fresh cut strawberries and real whipped cream tops the entire cake and layers within. Finished with chocolate shavings, this cake is sure to add a light hearted flare to any meal.


 

Fruitopia Cake- Cassis brings you another cake dessert perfect for your summer occasions. A light but sumptuous cake, the Fruitopia cake is three layers of our signature chiffon sponge cake filled with two layers of assorted freshly cut seasonal fruits and whipped cream. Typical fruits used are kiwi, strawberry, peaches, raspberries, blackberries, blueberries, mandarin oranges, and many others. The cake is iced with whipped cream and dusted with crushed chocolate to add a little sweetness.


Charlotte Royal - The Charlotte Royal is a truly stunning cake that will create lasting memories at any gathering Available in three distinct varieties: raspberry, hazelnut, and chocolate, this sumptuous domed cake is three layers of a special thin frenchipan cake soaked in fine liquors. The cake is then generously filled with thick layers of fresh mousse Finally, the cake is covered with a layer of gracefully interlacing roulade pastries creating a dazzling pattern of swirling buttercreams, preserves, and cake. The whole cake is glazed in apricot to give it a glorious sheen.


Tiramisu - Considered by many of the bakery's loyal customers to be one of Cassis's best kept secret, our Tiramisu is surely an unforgettable cake. We begin with three layers of our chocolate chiffon sponge cake soaked in real Kailua, add generous layers of imported mascapone cheese, a touch of chocolate buttercream, and surround the cake with walls of imported ladyfingers also soaked in Kailua. Our Tiramisu will change your taste in dessert forever.


Black Forest Cake - A traditional favorite the world over, Cassis bakery delights in bringing you a legendary dessert Our Black Forest cake is three layers of our signature chocolate chiffon sponge cake soaked with imported Kirsch liquor. The cake is filled with fresh whipped cream and fine imported sour cherries. The cake is then iced with more fresh whipped cream and candied cherries and garnished with dark chocolate shavings. Recovery from this decadent cake may be futile.

Pineapple Spice Tart - A derivation of our pineapple upside down cake, the pineapple spice tart is perfect for a lighter dessert or as an addition to a dessert buffet. We begin with a 9" traditional French butter tart and fill it with our sumptuous spice cake flavored with coconut, walnut, orange peel, nutmeg, and pineapple. The tart's sides are dusted with almond slivers and its top is crowned with pineapple rings. The torte' is then generously glazed in apricot.

 

Almond Pear Tart - A favorite of many Cassis customers, our almond pear tart is an exquisite dessert for almost any time of day or year. We begin with a 9" traditional French butter tart and fill it with our own sweet frenchipan pastry. A generous layer of freshly fanned pear is arranged on top of the frenchipan and the tart is glazed in apricot.


 

Boston Cream Pie - The Boston cream pie is another old Yankee favorite that Cassis has added their own flare to. Made in the form of a cake, we have taken three layers of our signature vanilla chiffon sponge cake and filled it with layers of rich diplomat cream. The cake itself is topped in a dark chocolate ganache and finished with white chocolate piping.


 

Yule Log - Our famous Yule Log was an instant success and is available again this season. This "show stopping" desert is a vanilla or chocolate sponge cake rolled with real Italian butter cream with raspberry or chocolate filling and covered with a devilish chocolate ganache bark. The log is encrusted with edible meringue mushrooms and each end is capped in finished marzipan. It is fitted with a festive ribbon and placed on a gold cake board and guaranteed to bring a delightful touch of holiday magic to any gathering this season.

Batten Bourg Cake - Another authentic German holiday desert, Cassis brings you the battenbourg cake. This rare cake is made by our chefs by painstakingly bonding cubes of alternating sponge cake together with our own rich butter cream to create a dazzling checkerboard pattern The cake is then enveloped in our own handmade marzipan and tied with a bow to resemble a delicious Christmas gift. Whether given as a gift to a lucky few or as a finish to your own holiday table, our batten Bourg cake will make a memorable treat for parent and child. alike.


Easter Egg Cake - Cassis's Easter Egg Cake is lovingly fashioned into an egg shape and covered lavishly with a dark ganache coating. Inside are layers of our signature vanilla chiffon sponge cake and whatever fresh mousse you choose: chocolate, lemon, raspberry, or even hazelnut.


 

Strawberry Short Meringue Torte’ - Another new innovation by master pastry chef Dmitri, this torte' is three layers of vanilla chiffon sponge cake with a lemon subtlety. Between each layer are fresh cut strawberries and it’s all surrounded by fresh whipped cream. The torte' is finished with delicate meringues which are taken off while cutting and used to finish any excess whipped cream that might fall from a fork. An elegant and light desert.


Toasted Coconut Torte' - Back by popular demand in the month of May, Cassis brings you a delightfully unique dessert The torte' is three layers of our signature vanilla chiffon sponge with a sweet cream cheese and candied ginger filling. It is then topped with freshly toasted and sweetened coconut to create a strikingly robust texture. Perfect for all occasions


Eggnog Cheese Cake - Cassis's eggnog cheesecake is a new twist on an old classic. We have taken our already heavenly cheese cake made with real cream and added the seasonal spices of nutmeg, cardamom, cinnamon, vanilla, and most importantly rum to create real trouble for cheese cake lovers. As if that was not enough to satisfy your holiday taste buds, a chocolate cookie base and chocolate flake finish gives our eggnog cheese cake just that added bit of sweetness to prepare you for that long winter's nap.


Cassis's Pumpkin Spice Cake - Is pumpkin your passion? If so you'll be glad you have some friends at Cassis Bakery. We have put together three layers of our excellent vanilla sponge cake with two layers of a special pumpkin mousse and topped off with a delicate pumpkin and hazelnut butter cream. Toasted almond and hazelnut sides finish this truly unique and truly delightful cake.
